Grandmaster of the Era, Father of Jiangxiang Aroma

The first deputy director and trade union chairman of the original Maotai Distillery, as well as the commander-in-chief of its technical expansion and renovation project. In 1956, the Maotai Distillery established a research team. Through the concerted efforts of veteran Maotai artisans such as Luo Qingzhong, the team achieved a groundbreaking milestone at the nation’s first Baijiu Research Conference in 1965: the establishment of the “three-aroma” standard—sauce aroma that is mellow and sweet, along with cellar-bottom aroma. From then on, a new era of sauce-aroma-style baijiu was inaugurated.

The “Hongyingzi Sorghum,” unique to the Chishui River Valley, is characterized by its firm and uniform texture, small grains with thick husks, and high tannin content. Its purposes are as follows: a) It facilitates the multi-stage steaming and cooking processes essential to the special brewing techniques used in making sauce-flavored liquor; b) It supports the entire fermentation process, enabling open fermentation to proceed smoothly; c) It helps nurture the perfect, rich aroma that is about to burst forth.

After the reform and opening-up, in order to pass on his lifelong mastery of traditional brewing techniques and the secret formula for blending the “Three Fragrances” to future generations, Mr. Luo founded Huacheng Distillery in 1999.
